Ingredients
- 2 pkgs. frozen chopped spinach
- 4 eggs
- 4 extra egg yolks
- 1 tsp. salt
- 3 cups heavy cream
- 1/2 tsp. white pepper
- 1 # grated swiss cheese
- 1 cup grated parmesan cheese
- 1 tsp. nutmeg
- 2 TB. dijon mustard
Preparation
Step 1
This recipe is from Fat City Restaurant in San Diego
defrost, drain and squeeze spinach. Mix all ingredients together. Fill frozen
unbaked quiche shell to top of crust. Bake in 350 degree oven for 1 1/2
hours or until knife comes out clean.
