Ingredients
- 4 dozen cherry tomatoes (about 2 pints)
- 11 oz. cream cheese, softened
- 6 bacon strips, cooked and crumbled
- 1/4 cup minced green onions
- 1 package (.4 oz) ranch salad dressing mix
- 2 tablespoons mayonnaise, if needed to soften
- parsley, optional
Preparation
Step 1
In a mixing bowl, blend cream cheese and ranch mix until smooth. Stir in bacon and onions. Add enough mayonnaise, if needed, to thin.
Slice a thin slice off tops of tomatoes and carefully scoop out pulp; invert on paper towel to drain. Spoon or pipe creamed mixture into tomatoes and garnish with parsley, if desired. Refrigerate until serving.
