Devilled Corn

Ingredients

  • 4 Tbsp butter
  • 2 Tbsp flour
  • 1 tsp mustard
  • 1/2 tsp salt
  • Dash pepper
  • 1/2 c milk
  • 3 slices bacon,cooked,drained and crumbled
  • 2 hard boiled eggs,peeled and chopped
  • 16 oz can whole kernel corn,drained 1 Tbsp lemon juice
  • 1/2 c Parmesan cheese
  • 1/2 c crackers crumbs
  • 1 Tbsp butter,melted

Preparation

Step 1

Over medium heat melt butter
Add flour,mustard,salt and pepper
Stir in milk,stirring until smooth and creamy
Remove from heat
In a baking dish, place bacon and hard boiled eggs
Mix corn with lemon juice
Add to bacon mixture
Pour cream sauce over all
In a separate bowl mix Parmesan cheese and 1 Tbsp melted butter Place on top of sauce
Bake at 300 F for 30-45 min
Serves 4
