Ingredients
- Pam cooking spray
- 5 cloves minced garlic
- 1-½ teaspoons dried oregano
- 1-½ teaspoons dried basil
- 1 teaspoon Italian seasoning
- 2 cups red wine
- 3 cups pear tomatoes, crushed in puree
- 2 teaspoons kosher salt
- 2 teaspoons freshly ground black pepper
- 1 tablespoon sugar
- 8 ounces shredded mozzarella, divided
- ¼ cup Parmesan cheese
- 1 cup seasoned bread crumbs
- 16 ounces penne pasta
Preparation
Step 1
Preheat oven to 350°F.
Spray large frying pan with Pam spray and heat over medium heat until hot. Add garlic and spices; stir to distribute ingredients. Stir and cook for 2 to 3 minutes to release flavors. Garlic should begin to turn golden but not brown. Deglaze pan with wine and mix well. Raise heat to high and reduce by half. Add tomatoes and simmer on low, stirring frequently. Add salt, pepper and sugar to sauce and stir until sugar dissolves. Remove from heat.
Prepare pasta as directed. Once prepared, add tomato sauce and mozzarella cheese. Mix bread crumbs and Parmesan and sprinkle on top. Place in oven until top is golden brown.
