Roasted Chicken with Garlic, Rosemary, and White Wine

Ingredients

  • 4 tbsp. olive oil
  • 2 cloves garlic, crushed
  • 1 frying chicken
  • Sm. bunch fresh rosemary
  • Salt
  • Pepper
  • 1/2 c. dry white wine

Preparation

Step 1

Heat oil in deep skillet, add garlic and chicken skin sides down. When chicken is browned on one side, turn over and take out garlic. Add rosemary.
When chicken is well browned on both sides, add salt, pepper and wine. Boil rapidly for 2-3 minutes. Then simmer 30-35 minutes. Add water if needed. Put chicken on serving platter. Remove any fat from liquid and pour over chicken.
