Strawberry Spinach Salad

  • Ingredients:
  • 10 oz. baby spinach, rinsed & torn
  • 1 lb. fresh strawberries
  • 1 C. pecans
  • ½ C. golden raisins (optional)
  • Dressing:
  • ¼ C. sugar
  • juice from 1 large lemon
  • 1 egg yolk
  • 4-6 T. vegetable oil

Preparation

Step 1

Rinse, drain, stem and tear spinach. Hull and halve strawberries. Layer spinach and strawberries. Refrigerate 3-4 hours. Combine sugar and lemon juice and whisk until most of the sugar is dissolved. Blend in the egg yolk. Add oil, 1 T. at a time until dressing is thick and creamy. Cover and refrigerate. When ready to serve, whisk dressing and pour over salad.
