Homestyle Beef Stew

Ingredients

  • 2 tbs. all-purpose flour
  • 1/8 tsp. pepper
  • 1 lb beef for stew, cut into 1 inch cubes
  • 1 tbs vegetable oil
  • 1 (14 1/2 oz can) clear vegetable broth
  • 1/2 tsp dried thyme leaves, crushed
  • 1 bay leaf
  • 3 medium carrots, cut into 1 inch pieces
  • 2 medium potatoes, cut into cubes
  • 2 stalks celery, cut into 1 inch pieces

Preparation

Step 1

1. Mix flour and pepper on a plate.
Coat beef with mixture.
2. In Dutch oven over medium high
heat, heat oil. Cook beef until
browned. Remove beef and set aside.
Pour off fat
3. Add broth, thyme and bay leaf.
Heat to boil, Return beef to pan.

Cover and cook over low heat for 1 hour.

4. Add carrots, potatoes, celery.

Cover and cook 1 hour or until beef is tender. Discard bay leaf. Serve.
