Potato Salad

Ingredients

  • 1/4 t. dry mustard
  • 1/2 c. sugar
  • 1/2 c. vinegar
  • 1 egg
  • 1 T. flour
  • 1/2 t. salt
  • 3 T. cream
  • 1 T. butter
  • 3 large potatoes
  • 2 Hard boiled eggs
  • 2 stalks celery, chopped
  • 1 onion, chopped

Preparation

Step 1

Cook first 7 ingredients together until boiling and thick. Stir constantly. add butter and let cool. Peel and dice 3 large potatoes and cook until done. Prepare 2 hard-boiled eggs. Chop celery and onion and mix together with potatoes and chopped eggs. Pour dressing over and mix well.
