White Chili- St. Peter's Silent Auction 2000

Ingredients

  • 1-2 pounds boneless, skinless chicken breasts (approx. 6)
  • 1 large onion, chopped
  • 6 stalks celery, chopped
  • 2 cloves garlic, minced
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 48 oz. jar great northern beans, drained and rinsed
  • 8 ounces Monterey Jack cheese, shredded
  • 1 small jar jalepeno peppers
  • 1 can chicken broth, (soup size) if needed

Preparation

Step 1

1. Cut chicken into bite size pieces. In a small amount of butter, saute chicken, onion, celery and garlic until chicken is cooked.

2. Add soups, beans, cheese, 3 tablespoons of chopped jalepenos and chicken broth (*If fat free soup is used decrease the chicken broth until desired "chili" consistency is achieved).

3. Cook over low heat on stovetop for one hour. Adjust jalepenos as desired.
