Chai spice muffins

Ingredients

  • 1 cup almond milk
  • 1 cup water
  • 1/2 cup vegetable oil
  • 2 tsp vanilla
  • 2 eggs
  • 2 cups rice flour
  • 1 cup hemp seeds or Quinoa flour (can be replaced with corn starch)
  • 1 cup corn starch
  • 2/3 cup sugar
  • 6 tsp (or 2 tbsp) baking powder
  • 2 tsp xanthan gum
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1/8 tsp ginger
  • 1/8 tsp nutmeg
  • 1/2 tsp cloves
  • 1/8 tsp cardamom

Preparation

Step 1

Preheat oven to 350 degrees F

Grease muffin pans or line with paper cups

Mix dry ingredients together in one bowl

Add in wet ingredients and beat for 2 - 3 minutes.

Fill muffin tins 3/4 full with batter.

Bake for 20 - 25 minutes until they start to brown.

Cool on wire rack. Top with icing if desired. Enjoy!
