Ingredients
- 1 cup almond milk
- 1 cup water
- 1/2 cup vegetable oil
- 2 tsp vanilla
- 2 eggs
- 2 cups rice flour
- 1 cup hemp seeds or Quinoa flour (can be replaced with corn starch)
- 1 cup corn starch
- 2/3 cup sugar
- 6 tsp (or 2 tbsp) baking powder
- 2 tsp xanthan gum
- 1 tsp salt
- 1 tsp cinnamon
- 1/8 tsp ginger
- 1/8 tsp nutmeg
- 1/2 tsp cloves
- 1/8 tsp cardamom

Step 1
Preheat oven to 350 degrees F
Grease muffin pans or line with paper cups
Mix dry ingredients together in one bowl
Add in wet ingredients and beat for 2 - 3 minutes.
Fill muffin tins 3/4 full with batter.
Bake for 20 - 25 minutes until they start to brown.
Cool on wire rack. Top with icing if desired. Enjoy!
