Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1/2 cup dry white wine
- 3 1/2 cups canned tomatoes with their juice (28-ounce can), chopped
- 1 teaspoon slat
- 1/4 teaspoon fresh-ground black pepper
Preparation
Step 1
1. In a medium saucepan, heat the oil over moderate heat. Add the onion and cook, stirring occasionally, until golden, about 5 minutes. Stir in the garlic and cook 1 minute longer.
2. Add the white wine and simmer until almost evaporated. Add the tomatoes with their juice and the salt. Bring the sauce to a simmer and cook, partially covered, 1 1/2 hours.
3. Add the pepper and puree the sauce in a food processor or blender.
