Ingredients
- 8 Red Potatoes or 4 Baking Potatoes, Cubed
- 1 Cup Chicken Broth
- 4 oz Cream Cheese, Cubed
- 1/2 Cup Sour Cream
- 3 Tbsp Parmesan Cheese
Preparation
Step 1
Boil potatoes in broth for 15 minutes, covered. Uncover for 5 minutes. Drain, reserving a ladel full of cooking liquid. Add to mixing bowl with cream cheese. Begin mixing and add sour cream and parmesan.
