Ingredients
- 2 lbs new potatoes
- 1 clove garlic, minced
- 1 tsp dried oregano
- 1 tbsp chopped fresh mint
- 2 tbsp chopped fresh parsley
- 1 tsp salt
- 3 tbsp vegetable oil
Preparation
Step 1
Preheat oven to 425. Cut new potatoes into even quarters
Combine garlic, oregano, mint, parsley, salt and oil in a large bowl
Add potatoes to bowl. Stir to coat potatoes with herb mixture
Spread potatoes in a medium baking dish or jelly roll pan. Bake, turning occasionally, until potatoes are golden and tender, about 20 min
