CHINESE CHICKEN SALAD

Ingredients

  • 3 or 4 chicken breasts
  • Chinese noodles
  • 1 box frozen Pea pods, thawed/or use fresh pea pods
  • 1 can sliced water chestnuts
  • slivered almonds
  • lettuce, thinly sliced (or Bok Choy sliced)
  • Dressing
  • 1/2 cup rice vinegar
  • 2 T. sugar
  • ginger
  • 1 T. sesame oil
  • pepper

Preparation

Step 1

Boil chicken breasts. Cool. Shred chicken or cut into small pieces. Slice/shred lettuce.
Cut water chestnuts in half.
Drain pea pods. Mix chicken, lettuce, water chestnuts and almonds together.

Mix dressing in a glass jar. Pour half the dressing on the mixed salad. Mix together. Add more dressing if needed. Add Chinese noodles and mix.

Dressing can be made ahead.
