Poached Eggs Piquant

Ingredients

  • 1 clove garlic, minced
  • 2 tbsp olive oil
  • 1/2 cup water
  • 1/4 cup chili sauce
  • 1 tsp Worcestershire sauce
  • 1/2 tsp salt
  • 1/4 tsp paprika
  • 6 lg eggs
  • 6 slices white bread, high quality, thick slices
  • 3 tbsp butter
  • 1/2 cup Mexican cheese, finely shredded
  • 2 tbsp fresh cilantro, finely chopped (optional)

Preparation

Step 1

Heat oil in frying pan and saute garlic over med-low heat for 8 to 10 minutes-do not burn. Remove garlic, add water, chili sauce, Worcestershire sauce and seasonings. Bring to a boil and reduce heat. Slipp eggs into sauce and poach until set, about 4 minutes.

Serve on hot buttered toast slices. Top with a tbsp of hot sauce from skillet and sprinkle with grated cheese and chopped cilantro (optional).
