Ingredients

  • 1 lb. Polska Kielbasa, cut up
  • 1 medium yellow squash, sliced
  • 1 medium zucchini, sliced
  • 1 medium onion, cut in chunks
  • 1-2 bell peppers, cut in chunks (red and/or green)
  • 8 oz package sliced mushrooms, rinsed well
  • Extra-Virgin Olive Oil
  • 1 spoonful minced garlic

Preparation

Step 1

Heat oil in a skillet, then add the garlic, mushrooms & onions. Stir for a few minutes, just long enough to get the veggies started cooking. Add the remaining ingredients and sauté until the squash is translucent and tender.

Serve over pasta, brown rice, or just by itself. You can add seasonings to taste, if you like, but it tastes just fine without any.
