Ingredients
- 6 ears of corn, unhusked
- 1 stick softened butter
- 2 T lime juice
- 1 T finely chopped tarragon
- Salt & pepper
- 2 T chile pepper
- 1/4 t cinnamon
- 1/4 crumbled queso fresco or mild feta
Preparation
Step 1
Soak corn in large bowl of water for 1 hr.
Light grill. On large plate, blend butter with lime juice & tarragon & season with salt & pepper. Spread butter in 1/3" thick layer in center of plate. In small bowl, mix chile powder & cinnamon. Grill corn over mod hi heat, turning often, til husks are charred all over, @ 25 min.
Carefully peel back corn husks but leave them attached to the cob. discard corn silk & use husk as handle. roll corn in softened butter, top with crumbled cheese & sprinkle with spice mixture.
