Ingredients
- 1 c. milk
- 1/2 c. butter
- 1 1/2 tsp grated orange peel
- 1 tsp vanilla extract
- 2 large eggs
- 2 c. flour
- 3/4 c. sugar
- 2 1/2 tsp baking powder
- 3/4 tsp salt
- 1 1/3 c fresh or frozen blueberries (unthawed)
Preparation
Step 1
Preheat oven to 400 degrees. Line muffin tins with paper cups. Combine first 4 ingredients in small sauce pan. Stir over medium heat until butter mets. Cool until warm to touch. Beat in eggs. Sift dry ingredients into large bowl. Add milk mixture and stir until just blended. Fold in blueberries. Divide batter equally among cups. Bake until golden and tester inserted in center of muffin comes clean. (about 20 minutes)
Transfer to racks to cool.
