Ingredients

  • 2 cups flour
  • 2 teaspoons cinnamon
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups sugar
  • 3 eggs, lightly beaten
  • 1 teaspoon vanilla
  • 1 cup vegetable oil
  • 2 large mangoes, diced
  • 1/2 cup walnuts
  • 1/4 cup raisins

Preparation

Step 1

Sift the 5 dry ingredients all together. In a large bowl, combine the remaining ingredients and mix well. Add sifted dry ingredients and mix well. Lightly grease a large loaf pan or several small loaf pans. Pour in batter and bake for an hour (mine always takes longer) at 350 degrees F. or until a toothpick in the center comes out clean. (Muffins take about 30 minutes and a small loaf pan, about 50 minutes) Cool on a rack before removing from pan .
