Ingredients
- 3 to 4 red potatoes, scrubbed and cubed into bite size pieces
- 2 to 3 sweet potatoes, scrubbed and cubed into bite size pieces
- 1 package mushrooms
- 2 unpeeled zucchini, cut into large chunks
- 1 red pepper, cut into chunks
- 1 yellow pepper, cut into chunks
- 1 cup carrots, cut into chunks
- 1 large onion, cut into chunks
- 1 butternut squash, cut into chunks (most any type of squash works well)
- 2 packages dry Italian dressing
- 2 to 3 tbsp olive oil
- ½ cup grated Romano/Parmesan cheese
Preparation
Step 1
Mix all ingredients in large bowl except cheeses. Place in 12@ Dutch oven and bake with 12 to 14 briquettes on the bottom and 14 to 16 briquettes on the top, stirring occasionally. When veggies are done, sprinkle with Romano/Parmesan cheese, let cheese melt slightly, and serve.
