Coconut Shrimp

Ingredients

  • 1/4 c flour
  • 2 Tbsp packed brown sugar
  • 1/4 tsp salt
  • dash cayenne pepper
  • 1 egg
  • 1 Tbsp lime juice
  • 1 c shredded,unsweetened coconut
  • 1 lb bag jumbo shrimp,frozen
  • 2 Tbsp butter,melted

Preparation

Step 1

Mix together flour,brown sugar,salt and cayene
Beat together egg and lime juice
Place coconut on pie plate
Dip shrimp in egg mixture,then in flour mixture,than press into the coconut
Turn on both sides
Place shrimp on cookie sheet sprayed with Pam
Drizzle with the melted butter
Cook at 425 F for 7-8 min
*You can prepare and cook the shrimp 1-2 hr before serving and then warm at 350 F for a few minutes just before serving but don't overcook
Dipping Sauce
1) Equal parts marmalade and Dijon mustard. Mix together
2)3/4 c apricot jam
1 Tbsp lime juice Mix
1/2 tsp ground mustard
