*PORK CHOPS (VIETNAMESE)

Step 1

Take 4 1" thick bone in pork chops (about 2 1/2 lbs) and then for marinade mix 1 finely chopped shallot, 1/3 c brown sugar, 1/4 c fish sauce, 2 tbsp rice vengar and pepper. Poke holes in meat, whisk marinade in shallow bowl, put meat in marindae, cover, and marinade 20 minutes, turning every 5. Or whithout pokeing holes, can marinade overnight. Then pan fry, about 4 minutes per side. While cooking, put remaining marinade in small pan and simmer till reduced. Serve with lime wedges. WE TRIED THIS 5/28/13 AND IT WAS VERY GOOD. I DID THE 20 MIN MARINADE, FINISHED OFF MEAT IN OVEN. ALSO SAUCE WAS PRETTY SALTY.
