Radish & Arugula Crostini with Brie

Ingredients

  • 16 slices of baquette cut on a bias
  • Cooking spray
  • 1 1/2 c sliced radishes
  • 1 tbsp EVOO
  • 1 tbsp fresh lemon juice
  • 1/4 tsp ground black pepper
  • 1/8 tsp salt
  • 4 oz. brie cheese
  • 2 c baby arugula leaves

Preparation

Step 1

Preheat oven to 400 degrees F.

Arrange slices of bread on a baking sheet; coat with cooking spray. Bake at 400 degrees F for 5 mins or until golden and toasted. Cool.

Combine radishes and next 4 ingredients (through salt) in a medium bowl, toss to coat.

Spread each of the bread slices with 2 tsp cheese; top with a single layer of arugula and a layer of radish slices.
