Radish Salad with Goat Cheese

Ingredients

  • 4 tsp white wine vinegar
  • 1 tbsp EVOO
  • 1 tsp honey
  • 1/4 tsp salt
  • 2 c radishes, wedges
  • 1 tbsp chopped fresh oregano
  • 4 c baby spinach
  • 2 oz. goat cheese, crumbled
  • 1/2 tsp freshly ground black pepper

Preparation

Step 1

Combine first 4 ingredients in a bowl, stirring well. Add radishes and oregano, tossing to coat. Place 1 c spinach on each of 4 plates. Using a slotted spoon, top each plate with 1/2 c radishes. Sprinkle each servings with cheese and pepper. Drizzle dressing over each salad.
