Baked Mushroom Crepes

Ingredients

  • 1/4 cup butter
  • 2 cups sliced mushrooms
  • 1/2 cup chopped onion
  • 1/2 tsp. minced garlic
  • 1/4 cup white wine
  • 1 1/2 cups bechamel sauce*
  • 1/2 tsp. chopped fresh tarragon
  • 1/2 cup whipping cream
  • 12 basic crepes*
  • 1 cup shredded Cheddar cheese

Preparation

Step 1

Heat oven to 350 degrees. In large frying pan melt butter over high heat; stir in mushrooms, onion and garlic. Cook until vegetables are tender. Stir in wine; cook until wine is reduced by half. Stir in 3/4 cup béchamel sauce and tarragon. Season to taste with salt and pepper. Stir in whipping cream. Divide mushroom mixture among crepes. Roll crepes; place in 13x9-inch baking pan. Cover with remaining béchamel sauce; sprinkle with cheese. Bake 15 to 20 minutes or until thoroughly heated and cheese is melted.
