Baked Apple Pancake

Ingredients

  • Apple Mixture:
  • 2 tbsp. butter (do not use margarine)
  • 2 apples
  • 3 tbsp. sugar
  • 1 tsp cinnamon
  • Batter:
  • 4 eggs
  • 1/2 cup milk
  • 1/2 cup flour
  • 1/4 tsp salt

Preparation

Step 1

Preheat oven to 425 degrees.

Apple Mixture:
Peel, core and slice apples. Melt butter in a 10 inch fry pan with an oven proof handle. Saute apples in butter until almost cooked, add sugar and cinnamon. Remove from heat, then prepare batter.

Batter:
Mix all ingredients in a bowl until smooth, mor or less. Pour gently over apple in fry pan (or pie plate). Place immediately in preheated oven.

Allow to bake for 15-20 minutes or until golden. Loosen edges from pan and invert over plate. Divide in half or quarters adn serve with butter and syrup.
