Ingredients
- 3 game hens, halved lengthwise, about 4 3/4 lbs
- 3/4 cup orange juice
- 3/4 cup honey
- 3 tablespoons soy sauce
- 3 cloves minced garlic
- 1 tablespoon cider vinegar
Preparation
Step 1
Place OJ, honey, soy sauce, garlic and vinegar together in a plastic bag-add hens and seal. Shake and combine. Place in frig 3 hrs or overnight.
Preheat oven to 400 degrees F (200 degrees C).
Place game hen halves with skin sides up into a 9x13-inch roasting pan.
Roast hens in the preheated oven for 20 minutes. Bring marinade to boil. Boil 10 minutes until syrupy. Brush hens with marinade-return to oven, roast 10 more minutes or until 160 degrees. If desired-heat under broiler for 2 minutes to crisp skin.
