Cold Cucumber Soup

Ingredients

  • 3 cucumbers peeled,seeded and cut into 1/4 in pieces
  • 2 cups chicken stock
  • 1 cup sour cream
  • 3 Tbsp chives chopped
  • 2 tsp fresh dill minced
  • salt to taste

Preparation

Step 1

In a blender or food processor combine cucumbers,1 cup of chicken stock and a dash of sal.
Cover and process until smooth in texture
Remove the mixture to a large bowl and stir in remaining chicken stock
Whisk in the sour cream,chives and dill and chill well before serving
