Italian Pasta and Bean Soup with Meatballs

Ingredients

  • 1 Tbsp Olive Oil
  • 1 medium Diced Onion
  • 2 Tbsp Minced Garlic
  • 6 cups, Reduced Sodium Chicken Broth
  • 2 cups Farfallini (or any small pasta)
  • 2 15oz cans Cannellini Beans, drained and rinsed
  • 1 15.5 oz can Diced Tomatoes in juice
  • 1/2 cup Grated Parmesan
  • 1 lb Italian Meatballs

Preparation

Step 1

Heat oil in a 3 quart saucepan over medium-high heat; Add onion and saute for 5 minutes or until light golden. Add garlic and cook, stirring for 1 minute.

Add broth and bring to a boil; Add pasta and cook for 5 minutes. Stir in beans, tomatoes and meatballs; Cook for 4 minutes or until pasta is tender. Remove from heat. Stir in cheese.
