Chili Relleno

Ingredients

  • 6 large mild green chilies roasted & peeled
  • 1/2 lb. Monterey jack cheese flour
  • Oil
  • Salsa
  • Cheddar cheese (grated)

Preparation

Step 1

Cut jack cheese 1 x 3 in. Pieces. Wrap in chili dust with flour. Separate eggs, beat whites till stiff. Fold in 1 tsp flour, salt & egg yolks. Heat ¼ in oil in skillet. Drop a large spoonful of egg mixture in skillet. Lay a stuffed chili in center of egg mixture. Top & enclose with another spoonful of egg. Turn and cook to a golden brown. Secure with heated salsa & grated cheese.
