Black Bean Salsa

Ingredients

  • 2 cans black beans, drained
  • 10-oz. corn, (frozen)
  • 2-4 cloves garlic, minced
  • ½ cup chopped red onion OR Vidalia
  • ½ cup chopped cilantro
  • ½ cup chopped flat-leaf parsley
  • ½ tsp cumin
  • ¼ tsp dried pepper flakes
  • ½ tsp salt
  • 1 small red pepper, chopped
  • ½ cup fresh lime juice
  • 1 ½ Tbsp olive oil

Mix all ingredients, refrigerate overnight before serving
