Ingredients
- 2 cans black beans, drained
- 10-oz. corn, (frozen)
- 2-4 cloves garlic, minced
- ½ cup chopped red onion OR Vidalia
- ½ cup chopped cilantro
- ½ cup chopped flat-leaf parsley
- ½ tsp cumin
- ¼ tsp dried pepper flakes
- ½ tsp salt
- 1 small red pepper, chopped
- ½ cup fresh lime juice
- 1 ½ Tbsp olive oil

Mix all ingredients, refrigerate overnight before serving
