Lemon Vinaigrette

Can be used drizzled over broiled salmon steaks, boiled new potatoes, tender asparagus spears or salads.

Ingredients

  • 1 T Dijon style mustard
  • 1/4 cup fresh lemon juice
  • 1 crushed garlic clove
  • 3/4 tsp. salt
  • 1/2 tsp freshly ground black pepper
  • 1/4 tsp sugar
  • 5/8 cup extra-virgin olive oil

Preparation

Step 1

Whisk mustard, lemon juice, garlic, salt, pepper and sugar together to dissolve salt and sugar. While whisking, slowly drizzle in olive oil and continue to whisk until thick. Cover; refrigerate until ready to serve. Let dressing come to room temperature; rewhisk before using.
