Burrito Bites

Ingredients

  • 1 1 can Rotel tomatoes
  • 2 1 cup instant rice
  • 3 1/2 3 1/2 cup water
  • 4 1 green pepper, finely chopped
  • 5 2 green onions, sliced
  • 6 1 cup shredded cheddar cheese
  • 7 10 flour tortillas
  • 8 1 can refried beans
  • 9 1 cup salsa
  • 10 1 cup shredded cheddar cheese

Preparation

Step 1

Combine rotel, rice, and water in saucepan. Bring to a boil, reduce heat, cover, simmer 1 minute. Let stand 5 minutes. Stir in green pepper, onions and 1 cup cheese. Spread each tortilla with 3 tblsp. refried beans, top with small amount of rice mixture. Roll up, put seam side down in a 9x13 sprayed pan. Bake uncovered at 350* for 25 minutes. Cut each tortilla into 4 slices, arrange on platter, top with salsa and 1 cup cheese.
