Apricot Bellinis

Start your brunch off right with this easy and scrumptious cocktail made with pureed apricot and sparkling wine.

Ingredients

  • 3/4 cup sugar
  • 3/4 cup water
  • 1 1/2 teaspoons grated lemon zest
  • 2 teaspoons lemon juice
  • 1 (15-ounce) can apricot halves in light syrup, drained
  • 1 bottle sparkling wine
  • 6 lemon zest twists

Preparation

Step 1

Simmer sugar and water in a small saucepan until sugar dissolves, about 2 minutes. Let cool.

Combine ⅓ cup cooled sugar syrup, lemon zest, lemon juice, and apricot in a blender; puree.

Divide apricot puree among 6 wineglasses or flutes. Top off with sparkling wine and a lemon zest twist.
