Roasted Red Peppers

Ingredients

  • 8 large red peppers, stems removed and cut in halves
  • 1-2 large sweet onions, thinly sliced
  • 4-5 cloves garlic, slightly pressed
  • 1 T olive oil
  • salt
  • pepper
  • oregano

Preparation

Step 1

In a roasting pan, make a bed of onions. Place peppers on onions and arrange garlic cloves around. Drizzle with olive oil. Add seasonings. Roast uncovered at 400 for 45 minutes. Stir mixture once halfway through cooking. Let mixture cool and remove skins from peppers. Serve as antipasto, on a sandwich, or over pasta.
