Ingredients
- 8 oz linguine
- 1 1/2 lb large peeled and deveined shrimp
- 2 Tbsp olive oil
- 6 cloves garlic, thinly sliced
- 1/2 cup fresh flat leaf parsley, roughly chopped
- 1/2 cup small sweet red cherry peppers, quartered
- 1/4 cup dry white wine
- kosher salt and pepper
Preparation
Step 1
1. Heat oven to 425 degrees. Cook pasta according to package directions.
2. Meanwhile, in a large baking dish, toss the shrimp, oil, garlic, parsley, cherry peppers, wine, 1/2 tsp salt and 1/4 tsp pepper. Roast until the shrimp are opaque throughout, 12 to 15 minutes. Serve with the pasta.
