Ham & Spinach Salad with Mustard Seed Dressing

Ingredients

  • 4 eggs
  • 1/2 red onion, 1/2 thinly sliced and 1/2 chopped
  • 8oz pkg sliced mushrooms
  • 6oz bag baby spinach
  • 1 1/2 tbsp mustard seeds
  • 6 tbsp olive oil
  • 2 1/2 tbsp sugar
  • 1 1/2 tbsp cider vinegar
  • salt and pepper
  • 1 lb boneless smoked ham steak, patted dry

Preparation

Step 1

Boil eggs, chop, transfer to bowl with sliced onion, mushrooms and spinach. In small skillet, toast mustard seeds until they pop, 3 min. Reserve half in a bowl, then add rest to blender with chopped onion, 5 tbsp oil, sugar, vinegar, salt and pepper, blend until smooth.
