Aunt Maureen's Lentil Salad

Ingredients

  • 1 c lentils
  • 3 T olive oil
  • 1/4 c sun dried tomatoes, chopped and drained
  • 2 T white wine vinegar
  • 1/4 t dried thyme
  • feta or blue cheese
  • salt
  • pepper

Preparation

Step 1

Cook lentils in salted water, about 20 min. Drain. Add remaining ingredients.
