Olive Oil Granola

Ingredients

  • 6 cups rolled oats
  • 2 cups shucked pumpkin seeds
  • 1 cup honey
  • 1 cup olive oil
  • 1/2 cup light brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon kosher salt
  • 2 cups of dried cherries

Preparation

Step 1

Toss together rolled oats, shucked pumpkin seeds, honey, olive oil, light brown sugar, vanilla extract and kosher salt. Bake on 2 rimmed baking sheets at 300, tossing occasionally, until golden, 35-40 minutes; let cool. Mix in dried cherries. Store at room temperature for up to 3 weeks.
