Ravioli Soup

Flavorful soup along the lines of Pasta e Fagioli

Ingredients

  • 1 lb Ground Beef or mix 1/2 lb each Italian Sausage & Ground Beef
  • to taste: Garlic Powder, Onion Powder, Italian Seasoning Blend, Basil (or better would be sauté fresh onion- 1/2 chopped and garlic- 3 cloves, then add ground meat)
  • 4 cups Vegetable Broth
  • 1 -15 oz- can of Crushed tomatoes
  • 1 -15 oz- can White Beans, drained
  • 1 -15 oz- can Kidney Beans, white or red, drained
  • 1 Container of mini Ravioli
  • (from the refrigerator section or pasta section)
  • Shredded Parmesan Cheese

Preparation

Step 1

In deep pan, brown ground beef with Garlic Powder, Onion Powder, Italian Seasoning Blend, Basil. Drain excess fat.
Add vegetable broth, crushed tomatoes, beans.
Bring to a boil, simmer for about 15 minutes.
Add Mini raviolis; boil until pasta is tender, about 5-10 minutes (see Ravioli package)
Serve in Chili-size soup bowls, top with fresh Parmesan Cheese
