Ingredients
- Juice of 1 lemon
- Finely grated rind of 1 lemon
- 2/3 c. Olive oil
- 2 tsp. Sugar
- 1 1/2 tsp. Salt
- 1 tsp. Coleman’s dry mustard
- 1/4 tsp. freshly ground pepper
Preparation
Step 1
Combine all ingredients and mix well. Toss with broccoli flowerets (blanched and chilled), sliced mushrooms, and shaved sweet onion. Toss well before serving and hold at room temperature. Also excellent with boston lettuce, sliced mushrooms and alfalfa sprouts, or Romaine lettuce tossed with shaved sweet onion and croutons, or blanched asparagus, shaved sweet onion and mixed greens.
