Easy Fried Fish

Ingredients

  • 2 pound fillets of mild-flavored, firm-textured fish, in 4 pieces
  • 1 cup flour
  • 1 tsp. Salt
  • 1/2 tsp. (freshly ground) pepper
  • 1/4 tsp. ground cayenne pepper
  • 3 tbs. vegetable oil

Preparation

Step 1

Heat oven to 300 degrees. Rinse the fish and pat it dry. Put the flour, salt and peppers on a shallow dinner plate and stir them around to mix them. Dip each fillet into flour mixture, coating it well on both sides. Heat vegetable oil in a wide skillet over medium heat. Add fish fillets in batches if necessary and cook several minutes on each side until the coating is browned and the fish is cooked through (about 3 minutes per side). Keep cooked fish warm in the oven while you finish cooking the rest of the fillets.
