Step 1
Make 14 oz box of elbow macaroni. While cooking then in food processor blend until smooth 1 1/2 c fat free cottage cheese. In large sauce pan over medium heat combine 2 tbsp canola oil, 1/2 c flour, peppper and 1/4 tsp garlic powder. Stir until mixed, and gradually stir in 2 c skim milk and bring to boil and cook for two minutes until thick. Then add blended cottage cheese and 2 c reduced fat shredded sharp cheddar cheese. Mix well. Then put macaroni in 2 qt casserold dish that has been sprayed with cooking spray. Then add cheese mixture and mix well. Bake in a 350 degree oven for 30 minutes. WE TRIED THIS ON 11-28-10 AND EVERYONE LOVED IT. IT MADE A LOT, LOTS OF LEFT OVERS.
