Shrimp and tortellini in tomato cream

Ingredients

  • 9 ounce package of cheese tortellini
  • 1 pound uncooked medium shrimp
  • 1 tablespoon olive oil
  • 1/4 teaspoon pepper
  • dash red pepper flakes
  • 2 shallots chopped
  • 2 14.5 ounce diced tomatoes
  • 8 ounces clam juice
  • 1/2 cup white wine
  • 2 tablespoon balsamic vinegar
  • 4 sprigs fresh thyme
  • 1/4 cup grated Parmesan and Romano blend
  • 1/4 cup half and half cream
  • 10 fresh basil sliced
  • 2 tablespoons chives
  • Shredded parm

Preparation

Step 1

Cook tortellini according to package.

In skillet, cook shrimp in 2 tsp oil. Stir in lemon peel, 1/8 pepper and red pepper flakes. Remove when pink

In same skillet cook shallots for 10 minutes then add garlic. Add tomatoes, wine, clam juice, vinegar, thyme and pepper. Bring to boil and reduce by half. Discard thyme. Stir in cheese, cream, basil, chives and shrimp. Add tortellini
