Preparation

Step 1

Bring 3/4 cup water, sugar, and lime peel strips to a boil in a small saucepan over medium. Reduce heat to medium-low, and cook, stirring constantly, until sugar dissolves, about 5 minutes. Remove from heat, and cool completely, about 30 minutes. Remove and discard lime peel strips.

Process lime simple syrup, avocado, yogurt, key lime juice, lime zest, and vanilla in a blender until smooth. Pour mixture evenly into 7 ice-pop molds. Sprinkle evenly with graham cracker crumbs, pushing some crumbs down slightly into the lime mixture. Freeze 30 minutes.

Insert 1 craft stick into each pop. Freeze 3 hours before serving.
