Fish Baked in Foil

Ingredients

  • 4 12" squares aluminum foil
  • 1 cup onion, minced
  • 1 cup celery, thinly sliced
  • 1 cup carrots, thinly sliced
  • 4 white fillets
  • 1 1/3 cups fish stock or clam juice
  • 1/2 cup white wine
  • Salt and pepper to taste

Preparation

Step 1

Divide onion, celery, and carrots among 4 pieces of foil, place a fillet on top. To each packet add 1/3 cup stock, 2 Tbsp wine, and salt and pepper. Close foil packets and fold edges tightly. Place packets in a shallow pan.
Bake in a 400° oven for 25 minutes.
