Crab Cakes

Ingredients

  • 1 1 1 Lb lump crab meat
  • 1/2 1/2 1/2 Cup dry plain breadcrumbs
  • 1/4 1/4 1/4 Cup Mayonnaise
  • 3 3 3 Tbsp chopped green onions
  • 1 1 1 Tbsp Dijon mustard
  • 1 1 1 egg white
  • 4 4 4 drops hot pepper sauce
  • 1/4 1/4 1/4 tsp salt (if using fresh crab ONLY)
  • 1 1 1 Tbsp oil
  • 1/4 1/4 1/4 cup chopped chives

Preparation

Step 1

Combine crab, 1/4 cup breadcrumbs, mayo, onion, mustard, egg white, pepper sauce, and salt if using.

Form into 8" patties. Transfer to plate, cover, and refrigerate for 1 hour.

Dredge patties in remaining breadcrumbs. Refrigerate again for 1 hour.

Heat oil and crisp about 3 minutes on each side. Work in batches. Sprinkle with chives when cooked.
