Crockpot Santa fe Chicken

Ingredients

  • 24 24 1/2 ounces (1 1/2 pound) Chicken breast
  • 14.4 14.4 can 14.4 ounces can of diced tomatoes with mild green chilies
  • 15 15 15 ounces of Black Beans, rinsed
  • 8 8 8 ounces frozen corn
  • 1/4 1/4 1/4 cup chopped fresh cilantro
  • 14.4 14.4 14.4 can of fat free chicken broth
  • 3 3 3 scallions, chopped
  • 1 1 1 teas. garlic powder
  • 1 1 1 teas. onion powder
  • 1 1 1 teas. cumin
  • 1 1 1 teas. Cayenne pepper (to taste)
  • salt and pepper

Preparation

Step 1

Combine all ingredient except chicken in the crockpot. Season chicken with salt and pepper, lay on top. Cook on low for 10 hours or on high for 6 hours. Half an hour before serving, remove chicken and shred. Return chicken and stir in. Serve over rice (extra point)
